They may be tiny and not very pretty but, when it comes to flavour, these organic capers pack a mighty punch. ‘To caper’ means to skip or dance about in a lively and playful way and just a few of these pickled flower buds are guaranteed to bring equal joie de vivre to your food.
Grown under sunny Spanish skies and harvested by hand, the capers are immediately preserved in wine vinegar, water and salt. The result is a pungent green spice with a delightful salty, piquant zing and a hint of lemon.

One of our Riverford chefs’ favourite ingredients, keep a jar of these capers in your fridge and add to all manner of salads, pasta dishes, chicken, fish and seafood, or to make homemade tartar sauce.

All about capers…

The caper plant is a tough ground hugging plant with long, thorny shoots that spread radially for up to 2 metres. It thrives in the sunniest and most arid regions all around the Mediterranean basin. The plant produces beautiful and wonderfully fragrant flowers and the ‘caper’ is the unopened bud of the flower. If these remain unpicked, the flower will develop into a caperberry, the fruit of the plant.

Delicias Organic Capers are hand-picked on a daily basis between mid-May and the end of August. The freshly picked Capers are then put into large drums, immersed in brine and left to ferment for up to 2 months before being thoroughly washed and packed for consumption.
