Bix is a soft, pasteurised triple-cream (meaning extra cream is added) cheese, named after the Oxfordshire village where the herd grazes. The recipe is loosely based on Chaource, a luxuriant white-rind cheese from northern France. This British adaptation is as dense and rich in the mouth as butter, with a balanced flavour that starts with yoghurty tang and grassy sweetness, deepening into toasty notes.
