Pastry Chef - Riverford Field Kitchen

This role at our award-winning farm restaurant The Riverford Field Kitchen is a fantastic opportunity for a chef who has a passion for quality ingredients. You’ll be working with ethical organic produce, including fruit and veg straight from the fields.
Our dessert offering is the icing on the cake of our set menu, and is the only part of the meal that guests aren’t required to share! Using seasonal produce, you’ll create memorable puddings and serve them straight from the kitchen to drooling customers.
The ideal pastry chef will be able to incorporate plenty of our organic veg, as well as fruit, herbs and foraged ingredients from the farm, showcasing the variety of ways our produce can be used. With the rise in specific dietary requirements, an ability to create unique gluten, dairy, egg and even sugar free desserts would also be most beneficial. We particularly see increasing numbers of guests requesting vegan desserts, so this is specifically of interest.
You will use the experience you have already gained in a professional kitchen to provide support to the kitchen team – preparing food, cooking dishes which fit with the Field Kitchen style of cooking, as well as mucking in to make sure the kitchen area remains clean and compliant with health and safety and hygiene. And of course, you’ll be cooking outside of the pastry section too – but not much. We go through a lot of pudding!
The kitchen area is open to our customers so we are really looking for chefs who are bright and personable, that are happy to talk to our customers about the food they have eaten.
A typical day for a Riverford chef…
We cater for each service like an individual dinner party, twice a day. First thing we check who’s coming and design a menu for the guests. We choose the best of the seasonal veg coming off the farm and the chefs discuss how they would like to prepare each dish for each course.
The chefs pick most of the fresh herbs and some of the fruits & veg from The Field Kitchen Garden – our polytunnel and allotment area 50m from the kitchen – and the herb beds surrounding the restaurant. All the chefs have a hand in choosing what we grow for the kitchen, so if you have a passion for a particular ingredient, make sure our gardener knows.
We prepare and time our cooking to serve our set menu banquet-style to all our guests at the same time, ensuring that our veg reaches them at the absolute peak of perfection and inspires them to replicate the dishes at home. The desserts offering, when the guests come up to the kitchen to have the puddings presented to them, is often the most popular part of the meal. The puddings must look impressive, taste amazing and showcase our fresh produce.
Sometimes you’ll be catering for special customer events at the farm – such as our monthly veg feasts or local collaborations with foragers, food heroes and local brewers or winemakers, or even Riverford pop-ups around the country.
