The juice prevents cut fruit and veg from browning and can be used as a substitute to salt in dishes. The zest and peel contain pectin and can be used to help set jams and jellies. Grated zest can also be used to flavour cakes, biscuits, mousses, custards and sauces.
Roll a lemon between your hands for a couple of minutes before using to warm the fruit gently – you will be able to yield more juice.
Lemons can be kept in a cool room or the fridge for at least a week.

The Spanish citrus season kicks off in November and runs right through until may. Most of our lemons come from a small group of farmers working in the hills behind Almeria in Spain. The group is headed up by Ginés Garcia, who is fiercely proud of his farm and the biodiversity it supports. He's even inspired other farmers in the area to join up and convert to organic.
For a milder lemon flavour, simply rub a sugar cube over the surface of the fruit so that it absorbs the citrus oils and pop into your cooking mixture.
Lemons are rich in Vitamin C and very low in calories. They can also be used for a wide variety of household uses – deodorising, bleaching, removing grease and stains and disinfecting. Lemon juice can lighten hair and the oil, when used in aromatherapy, has uplifting properties.
Our lemons are sold as class 2. This means that they might not look cosmetically perfect, but they are grown for the very best flavour. (We have to tell you this to satisfy some EU rules).
