parsnip and apple soup

Preparation Time: 15 minutes
Cooking Time: 40 minutes

Serves: 6

Ingredients

1 large onion
2 tbsp oil
500g (1lb) cooking apples
750g (1 1/2lbs) parsnips
900ml (1 1/2 pints) vegetable stock
3 tbsp fresh parsley
600ml (1 pint) milk
salt and pepper

Instructions

1. Chop the onion and saute in the hot oil until transparent.

2. Roughly chop the apples and parsnips and add to the pan. Continue to cook for 2 minutes.

3. Add the stock and chopped parsley and bring to the boil. season with salt and pepper. Cover and simmer for 30 minutes.

4. Stir in the milk. Transfer to a liquidiser and blend until smooth.
